Asparagus Salad
Yield: 6 servings
Ingredients
1 1/2 pounds fresh asparagus, washed
4 cups boiling water
Balsamic Italian Dressing
1/2 cup shredded Parmesan cheese
Directions
1. Use a sharp knife to cut asparagus diagonally into thin slices. Place in a large bowl and cover with boiling water. Let sit for 30 seconds or until asparagus turns bright green. Immediately drain asparagus and place in bowl of iced water until cooled. Drain again.
2. Place asparagus on serving platter. Drizzle on Balsamic Italian Dressing and top with Parmesan cheese. Serve at room temperature or cover and refrigerate until chilled or up to 4 hours.
Plan ahead: Prepare asparagus through step #1, up to 1 day ahead. Cover and refrigerate. Prepare dressing up to 1 week ahead; cover and refrigerate.
