Chef Pro and Pastry Pro Courses
For the food enthusiast who wants to develop professional cooking skills
The idea: Many people would like to be trained as a chef but cannot spare the time and/or expense to attend a full-time program. Our affordable, fast-track curriculum teaches essential chef skills and knowledge that will equip students for a wide range of culinary careers. Internship and restaurant experience are available through the school's Mystery Dinner Theaters and other cooking school events.
The target student is anyone who:
Wants to secure a career in a professional kitchen and possess the knowledge and skills to start immediately climbing the career ladder
Desires a career as a personal chef, caterer, culinary teacher, food-related business owner or other culinary profession
Wants to gain a broad-based knowledge of cooking
Is a recreational gourmet and wants to hone their cooking skills and dazzle friends and family with culinary expertise and exquisite cookery
The courses:
The Culinary Arts Program consists of four separate courses: Chef Pro I, Pastry Pro I, Chef Pro II, and Chef Pro III. The Pastry Arts Program also consists of four courses: Chef Pro I, Pastry Pro I, Pastry Pro II, and Chef Pro III.
Each Chef Pro and Pastry Pro course lasts 14 weeks. At the end of each course students earn a certificate of completion for that course. After all four courses of the program are completed, students earn a Chef's Diploma.
Each class consists of 20% chef lectures and demonstrations and 80% hands-on cooking experience in a fully equipped commercial teaching kitchen.
The Chef Pro courses include knife skills, Mother Sauces, stocks, cooking techniques and nutrition. The curriculum includes regional American cooking as well as international cooking focusing on French, Italian, varied Mediterranean , Mexican and Asian. Students will study wines, both domestic and international. Students learn food safety and handling and receive their food handler's certificate. Students will learn the cuts of meat and serving portions, and will become proficient at cooking meats, eggs, vegetables and fruits. They will learn plate presentation and meal planning.
In the Pastry Pro courses, the students will learn baking and pastry, including yeast breads, quick breads, puff pastry, phyllo pastry and other crusts and pastries both sweet and savory. The students will learn cake baking, decorating, and working with fondant. Students learn various sweet sauces for plate presentation of desserts.
A required hands-on final practical will take place at the last session of each course.
The supplies: All students will purchase professional textbooks and a professional chef's knife kit with knife carrying case. They will also purchase and wear a complete professional chef's uniform.
Our instructors: All of our instructors are certified chefs who are successful in their field. They each have fabulous personalities and they desire to pass on their knowledge and experience to eager students. Students spend time with them, learn their tips and many "chef secrets," and receive mentoring to learn how chefs can become successful in their chosen fields. Networking is high-value when developing a culinary career and this is the perfect chance to meet local chefs and food leaders and develop relationships in the food world.
